Chockablock Cookies

I have been looking for the perfect cookie recipe for ages!! This could be it... though not quite there yet for me as the sweetness of these cookies were greatly reduced, both intentionally and unintentionally:

  • I almost always always reduce the sugar of any recipe by about 30%

  • I used golden syrup instead of molasses and didn't realize I only had about 2 tablespoons left in the little jar and that's what I had to do with

  • I used unsweetened dessicated coconuts instead of sweetened shredded coconuts
And thus what could be the perfect cookie became somewhat not quite, just because it lacked that sweetness that makes a cookie so irresitable. I'm thinking now I should've added some brown sugar to make up for the lack of golden syrup. Ah well, this only gives me a reason to bake more of these soon!!

These cookies were baked by a group of great, inspiring bakers of the TWD group last week. A few months ago I didn't even know who Dorie Greenspan was (and how could I not?? however living in Malaysia probably has everything something to do with it). But that's in the past!! I need to thank my amazing dear friend Jen, whose passion and skills in the kitchen (as well as entertaining, photography bla bla bla skills) is ever inspiring!! Thanks for leading me to Dorie, girl!!

I love the richness of the texture - bumpy, nutty and crunchy. The dessicated coconuts bring out the crunchiness of the cookie, I think.


This recipe yielded about 55 cookies for me and they have been distributed between my two girls and I to be shared with friends in school and my colleagues at work. I love sharing food!!

Albeit the lack of sweetness, these cookies are still very good (and healthier too!!).
