Baking with Dorie: Coffee Break Muffins
Many thanks to Grapefruit of Needful Things for choosing this recipe from Baking from My Home to Yours by Dorie Greenspan for our BWD bake this week!
Honestly, it was a lazy Sunday afternoon for me yesterday - the gloomy, rainy weather did not motivate me to get up from the couch to prepare a batch of muffins. But I'm so glad I did! It took just a few minutes to put everything together and it came out beautifully from the oven 18 minutes later! And I'm happy to announce that it became my dinner (still on the couch) with a tall mug of Earl Grey tea. Bliss!
The muffins were moist - instead of 1 cup of strong coffee in the batch, mine was 1/2 cup of really strong coffee and 1/2 cup of evaporated milk. And I added 3/4 cups of chocolate chips for some texture and I can't be happier with the additions I made.

Hmmmmm, I can taste the coffee as I write this :D I also made something yesterday from Dorie's book. It was for a colleague's birthday today. I made the Black and white chocolate cake on page 258! It was divine! But oh so rich! I could only have one slice :D

I like the idea of adding chocolate....sounds so good!
ReplyDeleteTina - I think we were connected on a psychic plane yesterday: I added chocolate to mine as well AND I photographed mine sitting on the page of the book as well .... just laughing at the coincidence now. My internet just got restored so I'm heading over to finish writing up my post.

Shahieda dear, that cake have caught my eye a few times already...it is definitely a celebration cake and how nice of you to bake it for your colleague! your keywords: "black and white chocolate, divine, rich"...my daughter's birthday is in two days and I was thinking of baking the Devil's white-out cake (on the cover), but may change it to B&W chocolate cake thanks to you! ;) I will keep you posted!

Honestly, I was still in the 'couch potato mode' when photographing the muffins and thought why don't I just let it sit on the page - instant prop and styling! these were great - just had one (haha)...found an un-eaten muffin from my daughter's lunch box (from yesterday). They are even better after 2 days! ;-)
